Saucy Sausage Pasta

Saucy Sausage Pasta is a delicious dish of gluten-free fusilli pasta tossed with a delightful homemade simple sun-dried tomato pesto, Italian sausages, basil, spinach and fresh tomato sauce.Saucy Sausage Pasta /

Saucy Sausage Pasta is savory, saucy, filled with nutritious spinach and bursting with tiny little Malaysian cherry tomatoes. You are just going to love this dish as I made it gluten-free, dairy free and it could be easily made vegan by swapping out the Italian sausage with mushrooms.

Saucy Sausage Pasta is the kind of dish that even after you are full you still can't get enough of those delicious flavors so you keep going back for just a little more... and then just a little more.

The dairy-free spicy sun-dried tomato pesto is super easy to make just add sun-dried tomatoes, garlic, olive oil, basil, red chili flakes and a little salt and pepper to taste in blend in your food processor and in 5 minutes you have an awesome flavorful and slightly spicy sun-dried tomato pesto. I use a little water instead of adding more olive oil to thin out enough to mix in the food processor, to save on a few calories. You can add parmesan cheese by all means do, but if your dairy intolerant like me just hold. The added spice from the chili peppers makes the sauce addicting.

Dairy-free for me but of course my boys like a little grated parmesan cheese on top for good measure.

This sun-dried tomato pesto is so good I could just eat by the spoonful.  Instead, I doubled the sun-dried tomato pesto recipe and used on top of omelets, grilled chicken breasts and even with stir fried vegetables.

I used frozen spinach... yes you bet. Frozen spinach is great as it one of those items I would consider a frozen "pantry item" as at a moments notice you can make a fresh and delicious dish in no time. If you had fresh spinach on hand, that would even be more amazing.

Fusilli pasta shape is a great pasta to hold on to sauces as the sauces and aromatics clink to each one of the spirals. However, whatever shape pasta you have on hand will work like a charm.

Are you ready to make a 30 minute easy saucy sausage pasta recipe your whole family will love?

Gluten-Free fusilli pasta tossed with a delightful homemade simple sun dried tomato pesto, Italian sausages, basil, spinach and fresh tomato sauce.

  • Cook: 30 mins
  • Yields: 4 Adults or 1 Hungry Teenager

olive oil - 1 tablespoon

Italian Sausage - 1 pound (or can exchange for mushrooms to keep vegan)

pasta - 1 pound dried fusilli (gluten-free or your pasta of choice)

Sun-Dried Tomato Pesto

sun-dried tomatoes - 1 cup oil packed (or can use sundried pre-soaked in warm water for about 20 minutes until softened)

garlic - 2 cloves

salt and pepper - to taste

olive oil - 1/2 cup

water - 1/4 cup

basil - 1/2 cup roughly chopped

dried red chili flakes - 1 teaspoon

spinach - 1 cup (frozen squeezed dry)

tomatoes - 1 cup cherry tomatoes

pasta water - 1/2 cup

basil - to garnish (optional)

1Cook the Italian sausages in a large frying pan on top of the stove in a little olive oil and brown on all sides then add about 1/4 cup water and put the lid on and cook for about 15 minutes or until the sausages are no longer pink in the middle. Set aside. (Do NOT wash your pan that you just cooked the Italian sausages in as that is going to add some delicious added flavor to your pasta dish)

2Cook pasta according to box directions about 7-10 minutes in plenty of slated water. Drain, set aside and keep warm and toss in a little olive oil to prevent them from sticking.

3While your sausage and pasta are cooking, make your sun-dried tomato pesto. In a food processor, add sun-dried tomatoes, garlic, olive oil, basil, salt and pepper and dried red chili peppers. Add water as needed (about 1/4 cup) to thin out sun-dried tomato pesto enough to pulse in the food processor. (If you are running low on time and energy, you can purchase pre-made sun-dried tomato pesto and I won't tell a soul. However if you are dairy or lactose intolerant, your cannot use store bought as it is usually made with parmesan cheese. )

4Cut your sausage about 1/2 inch thick and toss back into the the same frying pan with your pasta, sun-dried tomato pesto, spinach, tomatoes and pasta water and toss until all of the pasta is coated with the delicious sun-dried tomato pesto sauce. Season with salt and pepper to taste.

5Step 5: Garnish with fresh basil as desired and freshly grated parmesan cheese unless you are lactose/dairy intolerant. Enjoy!

Love any and all Italian-style dishes. But spicy sausage? Top of the list! This looks SO terrific — I’d definitely be going back for seconds. Thirds. Heck, I’d probably rival your boys for snarfing this down! 🙂 Really nice — thanks.

  • This sounds so yummy–how can it not be with Italian sausage in it? 🙂

  • Spicy you say! I am in, just look at that beautiful pasta

  • It is definitely hard to resist a pasta with sausage and greens in it. I’m glad you served it in the smallish casserole dishes but I’d likely go back for seconds and thirds!

    • Bams Kitchen

Yeah..that whole small casserole dish for hungry teenager boy servings did not quite work out as planned… you just need to make it and serve it in a trough… LOL

  • This is a feast on one plate!! So nice and delicious recipe.. the best part is that it is super easy to make.

    • Bams Kitchen

Thank you Amira. Lately I am all about quick and easy as life has been really busy as it always is…

  • Hi Bam, love all the colors and flavors of this dish. This will be a new family favorite around here. Take care!

    • Bams Kitchen

Thank you Cheri, my boys certainly loved it and it is a sneaky way to get them to eat their spinach…

  • What a delicious and healthy way to serve pasta salad. it’s been really warm around these parts lately so I’m craving something like pesto pasta salad. Yum!

    • Bams Kitchen

You could certainly serve this cold as a salad. Maybe swap out with some grilled chicken instead. A great dish to bring to work/school… Have a super day!

  • Eha

Yummy everyday 🙂 ! Easy and not so bad nutritionally as long as one keeps the sausage content low and know where they come from [preferably one’s own kitchen!] Somehow I have always loved the fusilli form of pasta also [in spite of not being able to make it myself!] and spinach is one of the few vegetables I am happy to have in the freezer . . .

    • Bams Kitchen

Hiya Eha, homemade Italian sausages are the best. My dad used to make his own and I remember my job was to hold the end on the device. However, I would always end up leaving the end go as he would get me giggling. My mom used to add loads of fennel and spices and herbs and they were always delicious. You can always swap out with mushrooms if you would like to keep it vegan in this pasta dish.

  • I think pasta with sausages is something everyone loves! Count me in! And make it extra spicy!

  • My girls cannot get enough pasta – this dish looks perfect for them!

  • This is such a quick and easy and delicious dish perfect to make on weeknights!

  • hotlyspiced

Hi Bam, I can’t comment using Chrome but all is working well on Firefox! You have me all fired up for sausage pasta and I’m going to make some tonight using your recipe. Thanks so much for the inspiration xx

    • Bams Kitchen

Hello Charlie, I am delighted that commenting is working again for you. Bam’s Kitchen had to upgrade servers last week so hopefully that will resolve many of the technical issues you were having. Today it has been so overcast and foggy a perfect day to curl up to a delicious bowl of pasta.

  • This sounds amazing! I could eat several helpings of this, love sundried tomatoes in my pasta and turning it into a pesto sounds delicious!

    • Bams Kitchen

Thank you Jean. My boys did eat several bowl of this saucy sausage pasta. I had to fight for my little bowl!! LOL

  • I adore the combo of sausage and pasta, be it hot Italian chicken sausage or the fabulous original pork sausage. You’ve really amped up the flavor with this wonderfully versatile sundried tomato pesto, too. I’m definitely trying that pesto. I love the idea of it not having cheese in it, even though I have no issues with dairy. 🙂

    • Bams Kitchen

Thank you Betsy. I have literally been slathering my extra sun dried tomato pesto on everything.

  • This is a perfect mid-week meal for my family and I would love this for lunch too! Extra cheese for me 🙂

    • Bams Kitchen

Love this to bring to work or school the next day. Even better the next day. Take Care

  • This is my favorite kind of winter meal, Bobbi – and that pesto puts it over the top! Pasta, tomato and spinach – they are the base for all of my fav yummy meals. • Just love recipes like this! Simple, easy and tasty.

The best part is that gorgeous-sounding pesto. I’d smother it on everything!

  • Buona notte, BAM! I really do enjoy dishes like this one. Using cherry tomatoes and a tomato pesto is a tasty way to dress pasta and it’s not nearly as heavy as a more traditional ragu. WIth the varieties of sausage now readily available, you can easily change the flavor profile of the dish, too. I’ve not made a sun-dried tomato pesto but intend to do so. I’ve make it with fresh cherry tomatoes (Pesto Trapanese). In fact, this time of year I always make a batch. Good fresh tomatoes are impossible to get but cherry tomatoes are relatively good. Using them in a pesto is a reminder to me that winter won’t last forever. Thanks for the inspiration and the reminder. 🙂
    Have a great week!
