    Rainbow Berry Rooibos Ice Pops are a refreshing homemade healthy summertime iced tea popsicle made with organic rooibos herbal tea, mixed berries and just a touch of honey.

    Refreshing Rainbow Berry Rooibos Ice Pops

    A fabulous way to cool off these hot and steamy summer months is to enjoy our refreshing cooling ice lollies. Whether, you are a kid or adult, these little berry ice pops are sure to please. You are going to love our Rainbow Berry Rooibos Ice Pops because they are fruity, organic, herbal, have no refined sugar and no caffeine. They have only 3 ingredients and only take about 5 minutes to make. You got to love that!

    Rooibos Herbal Tea

    Have you tried organic Fraser Tea? We love their Rainbow Rooibos Organic Herbal Tea. This herbal tea is delicious either hot or iced but absolutely fantastic in an ice pop. With sweet Michigan cherries, raspberries, coconut, lemongrass, organic rooibos and honey bush teas, this tea is naturally sweet and aromatic and really makes these popsicles special.

    You can use either loose leaf tea or sachets for this recipe. We like to brew our tea hot for this recipe as it helps melt and incorporate the honey into the ice pop mixture.

    Burst of Seasonal Berries

    Strawberries, cherries, blueberries and raspberries are all in season right now. Have you been out to the farms berry picking yet? When we were little, our parents used to take us strawberry picking early in the morning, WITHOUT ANY BREAKFAST. So, when you are about 5 years old, it goes something like this… One strawberry in the basket and one strawberry in our mouths and this process was repeated for about 4 quarts. Trust us! We were so sick of strawberries that we could not look at another strawberry for the rest of the year.

    However, the fun did not end there. Then, we were all shuttled back home and had to clean the strawberries and pull the green tops off so they could be frozen and make lots of Strawberry Rhubarb Refrigerator Jam.

    The great news is that you can use either fresh or frozen berries in our Rainbow Berry Rooibos Ice Pops.

    No Refined Sugar

    We love our treats and desserts only delicately sweet. It allows you to taste the delicate berry flavors and the herbal tea. Honey is delightful addition and we add it to the rooibos herbal tea when it is still hot. However, if you want to make this recipe vegan, you can exchange with sugar, sugar alternative or even maple syrup. To keep this recipe low carb, exchange honey with a sugar alternative of choice like stevia. We have learned that once you quit sugar and allow the natural flavors of your food shine, you need less sweeteners.

    Ice Pop (Popsicle) Molds

    There are so many popsicle molds on the market today. We remember just using Dixie cups (paper disposable cups) with a wooden stick when living at home. Now, there are everything from these fancy one time use disposable ice pop bags to silicone molds and everything in between. Rainbow Berry Rooibos Ice Pops is a quick and easy recipe. Check out these easy steps below to making this refreshing summer treat.

    The easy way to unmold a popsicle is to either set you popsicle molds in a pan of warm water for a few seconds or run the popsicles molds under hot water for 10 to 15. Be careful to not get the popsicle itself wet. Sometimes, you will get one that is difficult to remove and this one will just need to be run under the warm water for a little longer.

    How long does it take for an ice pop (popsicle) to freeze?

    At least 6-8 hours or it is best if left over night.

    How long can you keep ice pops (popsicles) in the freezer?

    6-8 months if frozen and stored properly in a sealed container.

    What prevents the ice pops (popsicles) from freezing rock hard?

    It’s the honey or the sugar content. The honey in this recipe gives the Rainbow Berry Rooibos Ice Pops a nice mouth feel. They are not too hard or too soft. If you exchange the honey out with a sugar alternative, it may make the ice pops harder.

    Equipment

    • Popsicle (ice pop) Molds or disposable Dixie cups and wooden popsicle sticks

    Ingredients

    • 2 cups hot water
    • 4 teaspoon Rainbow Rooibos Organic Herbal Tea loose leaf or 4 sachets
    • 3 tablespoon honey or sweetener alternative of choice
    • 1 cup mixed berries frozen or fresh
    US Customary - Metric
    Prevent your screen from going dark

    Instructions

    • Brew Rainbow Rooibos HerbalTea with hot water for 5 minutes. Remove tea sachets or loose leaf tea from container.
      Tea steeping and all the ingredients on the table.
    • Add honey to taste and allow tea to cool. (You can put the mixture in the refrigerator or freezer to speed up this process, if you wish)

    • Add berries to the popsicle (ice pop) molds.

    • Pour the prepared tea into the berry filled popsicle molds.

    • Place the popsicle (ice pop) sticks into the mold. Freeze for at least 8 hours or overnight. Enjoy!

    Notes

    Feel free to use any fruit you desire in this recipe either fresh or frozen. We used frozen mixed berries for this recipe.
    If you want to keep this recipe low carb and vegan, then substitute the honey with a sugar alternative of choice. Please note that the honey gives these popsicles that delicious mouth feel and other sweeteners may make the ice pops (popsicles) freeze harder.
    We used Rainbow Rooibos Organic Herbal Tea for this recipe but feel free to substitute with your favorite tea of choice.

      Popsicles and summer go hand in hand. My daughters are eagerly waiting for the popsicle mould to arrive that is understandably taking a bit longer than the usual in the postage.
      Once they have their hands on them, They have a list of popsicle recipes now and I'm sure yours will go down the craze.

      So beautiful and versatile! Fresh berries can be a bit hit or miss these days with grocery delivery (not everyone shops as carefully as I would) so for those blemished or imperfect fruits, I can think of no better way to use them up.

      As a kid, my mom used to call them "party pops," but I'm more likely to call them freezer pops or posicles now.

      Bobbi - you know I do not eat desserts, cakes, cookies . . . and ice cream but rarely ! Frozen yogurt at times in the hot months.
      Have had about two popsicles in my lifetime and not made any. But these are just beautiful and have nought against 'my religion' in them. I know my neighbour has such molds - shall borrow, use and perhaps get my own. . .well, in a couple of months when the heaters begin going off . . . best . . .
