Ingredients and Substitutions
Yogurt – Greek yogurt by far has the best creamy texture. However, we have also had good success with lactose free Greek yogurt and plant-based or dairy free yogurts. If you use plain yogurt, you may want to naturally sweeten it. More on that later.
Fruit – We used strawberries because we had a few leftover from our strawberry banana pancake breakfast. However, you can really use any fruit your little heart desires. We have made chocolate frozen yogurt bites with peeled and finely chopped pineapple, kiwi, oranges, cherries, banana, blueberries, frozen berries and many more.
Unsweetened Cocoa Powder – Gives the frozen yogurt bites and our no bake strawberry chocolate cheesecake bites that deep rich chocolate flavor. We have also used Earth Echo’s Cacao Bliss with successful results and it’s delicious on chocolate covered frozen fruit.
Melted Coconut Oil – This ingredient has 2 very important roles. First, it gives the chocolate shell that silky luxurious texture that we all crave. Secondly and most importantly it makes the chocolate sauce harden on contact with the frozen yogurt. We used a virgin coconut oil for this batch. If you dislike the flavor or coconut oil, try a refined coconut oil.
Honey or Maple Syrup – Not only do they sweeten the magic shell, but they act as emulsifiers by blending the fat (coconut oil) and chocolate together smoothly. Use Maple syrup, if you want to keep this recipe vegan. As a bonus, these options are not refined sugar.
How to Make Yogurt Melts
Yogurt Clusters
- Mix yogurt and chopped strawberries (or fruit or choice) together.
- Spoon onto a parchment lined baking sheet and freeze.
Magic Chocolate Shell
- Add melted coconut oil, honey or maple syrup and unsweetened cocoa powder to a medium bowl.
- Stir well to mix.
Dipping Yogurt Clusters in Chocolate
- Remove frozen strawberry yogurt clusters from the freezer.
- Carefully, dip the yogurt disks into the magic chocolate shell and turn over to coat both side.
- Place back on the parchment lined baking tray. Refreeze for 5 to 10 minutes to enjoy or to store for later.
How to Naturally Sweeten Plain Greek Yogurt?
If you want to sweeten plain Greek yogurt naturally, consider adding one or two of these items to ½ cup of yogurt.
- ¼ mashed ripe banana.
- 2 tablespoons unsweetened applesauce
- ¼ tablespoon date paste
- ¼ teaspoon of cinnamon
- ¼ teaspoon of vanilla, almond, lemon, orange, pandan or other extracts
- ½ tablespoon of coffee sauce
- Peanut butter or pumpkin seed butter
- 1 teaspoons of maple syrup or honey with ½ teaspoon of vanilla extract
Additions
We kept our cool treats very simple. However, you can have a little fun by adding some of these additions along with the yogurt and fruit mixture.
- toasted nuts or seeds
- shredded coconut
- chopped almond and date bars
- granola
- chopped candied honeyed lemons
Toppings
The homemade chocolate magic shell dries super-fast. You will need to be speedy with adding these toppings as soon as you finish dipping them.
Try topping these easy yogurt treats with some of our favorites.
- toasted chopped nuts or seeds.
- dried rose tea petals
- desiccated coconut
- dehydrated fruit powder or freeze-dried strawberries.
- Rosmarinkrokant (German Rosemary Brittle) - it's so unique.
- flaky sea salt if you like that whole sweet and salty thing.
- or keep them plain like we did.
Veganize the Dessert
To keep these chocolate covered frozen yogurt bites vegan, use maple syrup or one of the natural sweeteners listed above and a plant-based yogurt.
Recipe Tips
- Assess the size of your freezer to determine the size of plate, baking tray or platter that can fit inside your freezer before you start the recipe.
- Line your plate, baking tray or platter (that can fit inside your freezer) with parchment paper so that the frozen yogurt bites don’t stick.
- Use an ice cream scooper or large spoon to make equal sized yogurt treats.
- Make sure the yogurt clusters are not touching each other to allow for even freezing.
- Yogurt bites generally take 2 to 4 hours to freeze solid. If they are still soft to the touch, keep them in the freezer for an hour more or until frozen solid. We freeze ours overnight.
- The frozen yogurt bites will stick to the plate when you first take them out of the freezer. Allow them to sit at room temperature for 5 minutes while you mix the chocolate magic shell. Then, they will lift easily.
- The chocolate magic shell may start to get grainy if the coconut oil starts to harden. Microwave the sauce for 5 to 10 seconds to get it back to a liquid state.
- Add any toppings quickly after you dip the yogurt bites. The magic shell dries fast!
- Directly out of the freezer these little treats are a little too hard to bite into. However, after about 10 minutes at room temperature they were perfect with a nice crisp chocolate shell and a smooth creamy frozen center.
Sweet Cold Treat Recipe Evolution
Recipe testing began in April 2013, aimed at creating a quick and easy sweet treat for students in Hong Kong during exam season. They craved ice cream, but it had to be portable and convenient.
Recipe Test 1:
We tried freezing individual scoops of Nestle ice cream. Epic failure! The ingredients lacked milk, and the scoops never froze solid.
Recipe Test 2:
We froze Go-GURT (sugar-laden kid’s yogurt tubes), cut them into 1.5-inch (3.8 cm) segments, removed the plastic wrapper and dipped them in 70% dark chocolate. While closer, they still weren't healthy enough.
Recipe Test 3:
We froze vanilla Greek yogurt and covered it with semi-sweet chocolate chips. However, the chocolate layer was too thick and contained refined sugar.
Final Success:
We perfected the recipe with naturally sweetened strawberry frozen yogurt bites and dipped them in a refined sugar-free crispy magic chocolate shell. Enjoy the decadence of dessert without the refined sugar!
Lessons Learned
Creating a thin, crispy chocolate shell with unsweetened cocoa powder is much easier than using melted chocolate chips or candy melts. Melted chocolate often results in a thick coating or it can seize up – making it unusable.
- Coconut Oil vs. Others: While we tested olive oil and butter, coconut oil hardens better, providing the ideal texture.
- Cocoa Powder vs. Chocolate Chips: Using 4 tablespoons of cocoa powder is a budget-friendly alternative to melting about 1 cup of chocolate chips. Melted chocolate tends to be too thick, wasting precious product. In contrast, a thin magic shell allows for easier coating of yogurt clusters and ensures no sauce goes to waste!
- Keep the House Cool! If you live in a warm and humid environment, like Hong Kong, it is best to keep the air conditioner on or work fast so that the yogurt clusters do not melt.

Frozen Yogurt Bites
- If you are using PLAIN Greek yogurt, please see the notes below for suggestions on how to sweeten yogurt naturally. Stir together prepared yogurt and chopped fruit in a medium bowl.
- Line large plate or small baking sheet with parchment paper. (This recipe makes 5 large frozen treats that can be frozen on large dinner plate which can easily fit in a side by side refrigerator.)
- Use an ice cream scooper or large spoon to add 5 dollops of the prepared yogurt with fruit mixture on the parchment lined plate or tray. Make sure the clusters are not touching each other so they freeze evenly. Freeze uncovered for 2 hours or until frozen solid.
- Remove the frozen yogurt and fruit clusters from the freezer. They will stick to the plate when you first take them out of the freezer. Allow them to sit at room temperature for 5 minutes while you mix the chocolate magic shell. Then, they will lift easily.
Chocolate Magic Shell
- In a medium bowl, add in the melted coconut oil, honey or maple syrup and unsweetened cocoa powder. Still until well dissolved.
- Dip the frozen yogurt bites into the magic chocolate shell sauce. Flip over and make sure that all side are covered in the chocolate shell. (If you want to add sprinkles or toppings, do this immediately) Repeat with the remaining yogurt pieces. Place the chocolate covered frozen yogurt bites back on the parchment line plate to dry. (If your home is humid, place the tray back in the freezer for 5 minutes for the shell to harden.)
- To Store: Place the chocolate dipped treats in a freezer safe sealed container and store in the freezer for up to 3 months.
- To Enjoy: Bring a few of the little treats out on a dish and leave them alone at room temperature for 5-10 minutes, just so that the inside yogurt is creamy and delicious.

Great food styling - love those little umbrellas! We can still get actual ice cream in our supermarkets (I mean in addition to the premium brands like Ben and Jerry's) but that's starting to change with some of the major brands. Bummer! I won't buy the stuff. Of course I said the same thing when everyone shrunk the size of tuna cans to 5 ounces, and caved - but at least I was still getting actual tuna, just less of it for the same money. I'd much rather pay more, and get what I want to buy. Anyway, really nice yogurt bites. Next time I have an exam I'm coming to Hong Kong to beg some of these from you!

Thank you John. You know one has to have all those cool little umbrellas when we make those fancy Kitchen Riff cocktails!!! I am with you all the way on quality ingredients. I think that is why we always cook from scratch. Now a days it is becoming more and more complicated to get wholesome products without all the nasty additives. I am going to buy an ice-cream maker this spring and then I will always know exactly what is going into it. Take care, BAM

Love these frozen yoghurt bites! My children love Gogurts and then dipped in chocolates, well I'd love those! Food everywhere is a bit worrying Bam, it's amazing how much junk is in it. It takes forever in the grocery stores these days because you have to read every package.
I hope these little bites gave your kids a boost that they needed to get through school projects and exams!

What?!?! No ice cream in Hong Kong?! That should be some kind of international crime! Your chocolate covered yogurt bites, now those are fabulous! My daughter loves gogurt and we freeze them, too. I love that you added other goodies to make them pretty!

I like your tenacity Bam on not giving up until you got what you are looking for. It's scary what some products contain now days!
I love these and I love the idea of the rose petals. I know pete would love the idea of the nuts in the ice cream so think I shall print this idea for when summer shows its lovely face again.

Bam these frozen yogurt bites have the ponytails written all over them! I have been giving them frozen yogurt pops a lot lately to counterbalance the sweets that they have on weekends when I bake. They love them just as much as ice cream which makes me very happy. Way to persevere and find a way to make this work. I am curious to try your German sprinkles/ topping. Do you think it is available in Austria? I have a friend from there and she goes back a few times a year. Great post!
Healthy World Cuisine says
Hi there Barb! Your pony tails will love these little frozen yogurt bon bons. My boys inhaled them...lol.. like that was a shock! This week the whole exam prep and end of year assignment deadlines are all due at the same time and my boys need a little something to take the edge off from cramming. My dear friend Anja from Germany gave me Rosmarinkrokant as a gift the last time I visited her in Muenster. I am sure there is something similar out there in other countries or you could make your own with chopped fresh rosemary and ground golden rock sugar. Rosmarinkrokant is delicious and beautiful used in many dishes, especially a goat cheese cheesecake. Yum! Have a super week. BAM

Where can i buy Rosmarinkrokant in HK?
Healthy World Cuisine says
Hello Kelly, my friend from Muenster gave me Rosmarinkrokant as a lovely gift during my last culinary trip to Germany. I have not seen this exact brand in Hong Kong but you could make this easily yourself at home by pounding golden rock sugar into very small grounds, add fresh rosemary and a little pinch of salt and put in a tupperware and shake well. Your homemade rosemary sugar would keep well for a few weeks.

These frozen yogurt bites are adorable and perfect as a little pick-me-up for exam crunch time! I can't believe the Nestle ice cream doesn't even freeze up. As you said, too many artificial ingredients in it. That's why, I make my own ice cream these day. You know exactly what's going into the mix and always fresh. It might be hard to do in HKG as I remember how small the freezer area is in the fridge. I've never tried the Rosmarinkrokant. But it sounds delicious. Let me go check out where I can get my hands on a jar. 🙂 Thanks for sharing.
Healthy World Cuisine says
Hi Amy, homemade ice cream would be perfect for this recipe. Your ice cream recipes rock!!! I love to be able to read the ingredients and know what they are. I would love to make my own ice cream and I would love to purchase an ice cream machine. I guess with summer on our door steps this would be the great time to purchase one.

BTW..that stinks about the poultry. Who would ever think you had to watch out for that in China? Chickens are plentiful and a cinch to..well..is breed the word when it comes to egg laying? lol
Healthy World Cuisine says
I am very concerned about this possible epidemic in China as they do not have a handle on this new flu. Food products and people travel from China to HK and from HK to China by the droves everyday. It is just a matter of time... please say a little prayer.... I think HK is much smarter after the SARS incident and have really put lots of preventative measures in place but HK is a little tiny country of 8 million people all living in very close proximity of one another. I have always purchased my meats, poultry and eggs from States or Australia but the wet markets here and the foods used in the restaurants are all local. China is really going through lots of stress right now with the recovery of the quake victims and this new flu epidemic. Please say a little prayer for them that it all gets sorted soon.
Lisa says
That's just awful. Will you be moving back to the states anytime soon?
Lisa says
I was rooting for you throughout this post to get something frozen and dippable (OK, I mae up a word lol). I knew you did from the first photo, but it was kind of suspenseful nonetheless! Too bad that ice cream in China isn't real ice cream. Then again, I can't think of many, if any, Chinese dishes that contains milk or cream! Help me out here! LOL In any event, I'm so glad the Gogurt sticks cut up worked out perfectly - they look delightful!
