Ingredients
Cream cheese – We used a plant based cream cheese to keep it dairy free just like we did with our no bake boozy cherry cheesecake jars. Regular, Neufchâtel cheese or even fat free cream cheese all work well.
Chocolate pudding – We love our rich homemade chocolate pudding made with almond milk or milk alternative of choice. If using the store-bought chocolate pudding the smallest package is 3.4 ounces which makes 2 cups of pudding. Now you have a delicious choice. You can either double the recipe for these easy no bake Strawberry Chocolate Cheesecake Bites or enjoy an extra cup of pudding all to yourself!
Strawberries – are currently in season and super sweet. You can also use other berries or fruits like raspberries, blueberries, or cherries. Do not use frozen berries or fruits as these have too much liquid for this recipe.
Roasted Almonds – With just a rough chop in the food processor to give these dessert balls a fun almond crunch. From our recipe testing, using almond flour makes the ball texture grainy, so it is not recommended. The goal is to have a fun crunch like a Ferrero Rocher - but with almonds instead of hazelnuts. We used lightly salted roasted whole almonds and gave them a quick pulse in the food processor.
Almond Extract – along with chocolate and berries is like a match made in heaven. In a pinch, you can substitute with vanilla.
Honey – or maple syrup to lightly sweeten. Date paste is also another delicious to sweeten naturally.
Unsweetened Cocoa Powder – adds a punch of chocolate flavor with very minimal calories. We are sorry that one must have been shy and did not make it into the photo shoot.
How to Make Cheesecake Bites?
- Mash strawberries
- Mix mashed berries, cream cheese, almond extract, and honey together.
- Add in the prepared chocolate pudding and roughly ground almonds.
- Freeze for approximately 1 hour or until firm.
- Roll into balls and dust with unsweetened cocoa powder.
- Freeze until firm and enjoy.
Recipe Tips
- If you use roasted salted almonds, the little bit of salt accentuates the sweet.
- Only rough chop or a light pulse the nuts with the food processor. Don’t pulverize the almonds too small or you won't have that delightful crunch.
- If you spread out the chocolate cream cheese batter out thin or to the edges of the bowl, it freezes quicker. You could also spread batter in a baking pan before freezing to expedite this process.
- The time it takes to freeze the nutty chocolate cream cheese batter depends on how thick or thin you have the batter spread out. It can take anywhere from 1 to 2 hours. You can freeze it overnight and then allow it to sit at room temperature for about 10 -15 minutes or until it is scoopable.
- Using an ice cream scoop is a convenient way to scoop and make the balls.
- Flour your hands with unsweetened cocoa powder and/or the balls before rolling into a ball.
How to Serve?
Remove the No-Bake Strawberry Chocolate Cheesecake Bites from the freezer for about 10 – 15 minutes before enjoying. Just like with our chocolate frozen yogurt bites, you don't want to be hurting your teeth. Give them just a few minutes to soften lightly.
If it is just us, we just pick it up with our fingers to enjoy this 2-3 bite dessert. However, if we are serving to company, we like to garnish with fresh strawberries and little serving toothpicks.
How to Storage Cheesecake Bites
Store these Strawberry Chocolate Cheesecake Bites in the freezer for up to 3 months in a sealed container. They will melt if stored at room temperature or in the refrigerator. For a fun summertime treat for the kids, freeze in popsicle containers.

No-Bake Strawberry Chocolate Cheesecake Bites with Almond Crunch
Equipment
- mixer hand or standing (makes it easier)
- large mixing bowl
- ice cream scooper or large spoon
Ingredients
- 1 cup chocolate pudding prepared with non-dairy or dairy of choice (*see notes)
- ⅓ cup strawberries fresh mashed (or about 8 large strawberries)
- ½ cup cream cheese 4 ounces of regular, light or plant based (softened to room temperature)
- 2 teaspoons almond extract
- 2 tablespoons honey or maple syrup, date paste
- 1.5 cups roasted almonds very roughly chopped (our were lightly salted)
- ⅓ cup unsweetened cocoa powder
Instructions
- Prepare chocolate pudding and chill. Set aside 1 cup of chocolate pudding for the recipe. Chop and mash strawberries with a potato masher or food processer.
- In a large mixing bowl add ½ cup softened cream cheese, ⅓ cup mashed strawberries and blend with mixer. Next add almond extract and honey and continue mixing.
- Add 1 cup of prepared chocolate pudding and 1.5 cups roughly chopped almonds and fold to mix together.
- Spread the chocolate cheesecake batter mixture up to the sides of the bowl (so it takes less time to freeze) and place in freezer for 1 to 2 hours or until batter is firm. (See Recipe Notes)
- Place the unsweetened cocoa powder onto a small bowl or plate.
- Use an ice cream scoop or large spoon and make a 2 inch ball with the frozen batter mixture. Lay the chocolate cheesecake ball in the unsweetened cocoa powder. Dust a little of the unsweetened cocoa powder on the ball before picking up and rolling into a more symmetrical ball. If at anytime during the rolling process the batter becomes to wet or difficult to roll, place the no bake batter mixture back into the freezer to let it firm up again. Repeat the process for the 14 dessert balls.
- Place the no bake strawberry chocolate cheesecake bites in a sealed freezer safe container to firm back up.
- When you are ready to eat, let the chocolate cheesecake bites sit for 10 minutes or so to soften slightly. Enjoy!

Notes
- Bonus it you use roasted salted almonds because the little bit of salt accentuates the sweet.
- Only rough chop or a light pulse of the food processor is all you need to keep that nice crunch.
- If you spread out the chocolate cream cheese batter out thin or to the edges of the bowl, it freezes quicker. You could also spread batter in a baking pan before freezing to expedite this process.
- The time it takes to freeze the nutty chocolate cream cheese batter depends on how thick or thin you have the batter. It can take anywhere from 1 to 2 hours. You can freeze it overnight and then allow it to sit at room temperature for about 10 -15 minutes or until it is scoopable.
- Using an ice cream scoop is a convenient way to scoop and make the balls. If the mixture is too firm at first, it will start to soften lightly in about 5 to 10 minutes at room temperature.
- Flour your hands with unsweetened cocoa powder and/or the balls before rolling to prevent sticking.

Thanks for the kind comment. You are always welcome to drop by but you have to be quick to the punch as I have 2 hungry teenage boys here and food goes really fast! Take care, BAM

Oh, that is just plain mean. I could so use a couple (or 5) of those cheesecake bites right about now. 😉

I will send some right over! I Might need a little dry ice!

I'm decorating-challenged, so this would be lost on me. But maybe my wife - who is the real baker - might find it interesting. Hmmm? 😉 Good recipe, nice post - thanks.
Healthy World Cuisine says
Actually this was a big step up for me as I am usually stick figure 101 expert only. So if I can do it, really anyone can do it. I guess you have to let your wife have a little fun and do the baking. Take Care, BAM

that's a very nifty gadget indeed 🙂

i'll welcome that gift from my husband with open arms! nifty kitchen gadgets are always welcomed. I love the presentation of those mini heart-shaped cheesecakes! gives the good-old cheesecake a little makeover..
Healthy World Cuisine says
I think as this baker you are you would really like this gadget. However it is only good for small projects not big ones.

Those definitely look like heavenly bites!

Those look fantastic Bam, really so nice! Beautifully made - I could imagine seeing them in a bakery or cake shop! I almost bought one of those deco pen things, but settled instead for a piping gun... which reminds me, I need to make churros soon 😀
Healthy World Cuisine says
Thanks Charles. Usually as fancy as I ever get is to sacrifice a plastic baggie with a little cut on the edge to make my designs. This was less messy.
Ohh my yummy churros! My boys would love those sprinkled with a little cinnamon sugar.
Take Care, BAM

Thanks Greg. I am on my count down now to going back to US to eat a real homegrown tomato! So go ahead post away with lots of juicy tomato pictures as I can see light at the end of the tunnel. Take car, BAM
Savory Simple says
My goodness these look amazing. What a gorgeous presentation! And the digestive biscuits. Love!
Healthy World Cuisine says
Thank you for your kind comment. Digestive biscuits are a great alternative to graham crackers for this dish. There are also so many different kinds of flavors such as ginger, plain and chocolate and all of them work very nicely in this dessert. Have a great day. BAM

I'm imagining the hours of fun you can have with your new gadget. Not an anniversary present but I did get a shed one year 🙂 Much rather have something I want !
Healthy World Cuisine says
I have been given some really unique gifts in my lifetime but never a shed. That is a good one and perfect for all of your garden gadgets! I hope that I don't end up with so many kitchen gadgets that I need a shed. Take care, BAM

Too Pretty To Eat is never a problem with teenagers around! Girls are just as bad, believe me...
Great recipe, and good on Mr. Anon for the fun gift!
Healthy World Cuisine says
Thanks Marie. I have heard this about growing teenage girls as well. However, they always come across as dainty and so full when they are around their boyfriends. Closet eaters I guess... Take Care, BAM
machisan says
WOW! these look like the best starter ever, they’re making my mouth water
Healthy World Cuisine says
My only suggestion is to make more as they do go quickly. Especially with teenage boys in the house.

Your desserts are works of art. I laughed at your post because I've been getting kitchen gadgets from my husband since our first Christmas together. Some women might be offended but I love it. I wouldn't complain if I got your handy little Lékué Decopen (remembering the name will be the hard part!).
Healthy World Cuisine says
As long as were not gifted a shop vac or ironing board...you are in the clear. I do like it quite a bit and it has a little end stopper so if you make some kind of glaze you can store it in the fridge right in the Decopen for later use. That is kind of a nice feature.
Kristy says
Hi Bam! I love this gadget! I made a cake for Mr. N a few weeks back and this would have been perfect for that little adventure. What fun! And your bites look delicious. I know my kids would devour the plateful. 🙂
Healthy World Cuisine says
Thanks Kristy. I think for big pastry jobs just as a wedding cake or some other type of masterpiece this device is not appropriate but for small jobs or just to decorate your savory plates with your sauces it is very useful. Very fun! Take Care, BAM
