    Breaking Breakfast Routines

    There is no documented code of ethics or rule book that says you have to eat the usual eggs, pancakes or cereal for break. No sir E! These crazy rules were meant to be broken. Did you know that one of our absolute favorite breakfasts is our Turmeric Vegetable Medley. Yep! Now you know. Try something new. I bet you will love it.

    Dairy or Egg Allergies are no problem!

    Spicy Tofu Scramble is a delicious option for those of you who happen to have egg, dairy or gluten sensitivities or are just bored out of your mind with the usual breakfast options.

    This recipe is also a great way to use up all of those bit and bobs of veggies in your crisper. We just happened to have tomato and spinach in our crisper but goodness you can use any vegetables you like.

    If you are using firmer vegetables like carrots or root vegetables be sure to cut them smaller and steam with just a couple of teaspoons of water with a lid in your frying pan for a couple of minutes so they have a chance to get tender before adding the other ingredients in the pan.

    Tofu- The Blank Canvas

    As you know, tofu is a blank canvas. Tofu takes on the other flavors of the recipe. That is why it is important to spice it up like we did with our tofu pancakes. We used the traditional Chinese starter of chili, ginger and garlic to get the flavor profile going. The addition of tomatoes added a natural sweet note to this Spicy Tofu Scramble.

    The ginger, chili and garlic are warming herbs in Traditional Chinese Medicine  (TCM) which compliments the cooling tofu and spinach in this dish. This is the best way to Feed Your Spleen; Nourish your Body.

    We used an extra firm tofu for this recipe as that is the consistency we were going for. We find the silken tofu does not work as well in this recipe as it is too soft and lacks texture. It is also important to dry the tofu well before adding to the pan.

    Easy and Quick

    Spicy Tofu Scramble takes less than 15 minutes to make so what do you have to loose...?! Give it a try. You may also want to make extra as you can keep the leftovers in the refrigerator for up to 3 days and then just reheat and eat.

    Ingredients

    • 1 tablespoon olive oil
    • 1 inch ginger
      knob peeled and grated(fresh)or ¼ teaspoon dried ground ginger.
    • dried red chili flakes
      to taste or desired heat level (sprinkle)
    • 1 clove garlic
      peeled and minced
    • 8 oz tofu
      dried with paper towel and crumbled
    • ⅓ cup tomatoes chopped (Cherry tomatoes are really sweet and delicious)
    • ¾ cup spinach
      fresh washed
    • salt and pepper
      to taste
    • 1 tablespoon green onions (optional) garnish

    Instructions

    • In a medium frying pan, add olive oil to medium heat and add ginger, chili flakes and garlic and stir fry just until aromatic.
    • Add crumbled tofu and stir fry for 2 minutes.
    • Add tomatoes, spinach and salt and pepper to taste and just heat through or until the spinach wilts.
    • Garnish with fresh green onion slices if desired and enjoy!

    Notes

        Usually in China or in Japan you will see a scrambled tofu but it will usually also have eggs. In Japan, they might also add some dashi. In China, you might see the addition of spring onion and sesame oil additions... Now you can make this at home. Take care

      I love tofu scramble, but I have only made it dry. I don't know why I didn't think of making it semi liquid. This one here looks droolicious, Bobbi. Wonderful idea. I would surely try your recipe next time when I will make tofu scramble.

        Hello Anu, it is the broth of the tomatoes and the spices that really make this dish pop. We have also made this recipe with dried vegetables and also very delicious but we were in the mood for something nourishing and comforting.
