    🥚 Italian Scrambled Eggs

    One bite and you are going to be hooked. Pan seared zucchini with savory tomatoes and Italian herbs make this 5-ingredient breakfast something special. Seriously, just 5 little ingredients and some are just pantry ingredients. Super easy too.

    • Eggs
    • Zucchini (courgette)
    • Tomato
    • Italian seasoning (dried herb mixture of basil, oregano and thyme)
    • Olive oil
    • Salt and pepper to taste

    🍳 Breakfast: The Most Important Meal of the Day

    Are you a breakfast or brunch eater? We never used to eat breakfast but now after years of research and understanding our bodies, breakfast seems to be key to prevent us from eating snacks later on in the evening. Granted, we still need time to caffein-ate first just so we find the pots and pans in the kitchen, but we do love breakfast. (smiling)

    Do you know why? The rationale behind this is you are most active during the daytime and readily burning calories. However, in the evening you are not as active.

    However, this delicious vegetarian recipe any time of the day, not just breakfast. Are any of you working night shift or evening shift? Then, of course this is perfect for you as you never really know what you should be eating. We used to eat breakfast like foods all day long. Italian Scrambled Eggs are also easy to digest, warming and nourishing.

    🐄 Keeping it Dairy Free

    If you like to add a little milk or dairy alternative to your eggs, feel free to do so. However, we like our Italian scrambled eggs without dairy. The tomatoes give this recipe a delicious vegetable broth flavor that you are going to love. Did you know that milk can make your eggs tough and bland?

    However, if you want to add a little freshly grated parmesan, feta or cheese of choice, feel free to do so.

    🍽️ How to make scrambled eggs better?

    • Don’t add milk or cream as this can make eggs tough and rubbery
    • Use butter or olive oil to fry them
    • Always beat your eggs in a separate container first as you never know when you might get that defective egg. In addition, it helps to beat and pull together the whites and the yolks together during the beating process.
    • You can beat your eggs with a fork or whisk. No fancy whisks here.
    • Cook over low medium heat just until they pull all together and remove from heat.
    • Your Italian Scrambled Eggs will continue to cook after you take them off the heat.

    In these unprecedented times, just use whatever you have on hand in your kitchens. We are all about conserving and making the most of the ingredients you have on hand. Any leftover vegetables would be fabulous in this recipe such as spinach or maybe some sautéed mushrooms.     Ingredients

    • 1 tablespoon olive oil or butter
    • ¾ cup zucchini (courgette) cut in half lengthwise and sliced (or one extra small zucchini)
    • 1 tomato chopped
    • 2 whole eggs beaten
    • ½ teaspoon Italian seasoning dried (or a mixture of basil, oregano and thyme)
    • salt and pepper to taste
    • 1 green onion sliced - optional for garnish
    US Customary - Metric
    Prevent your screen from going dark

    Instructions

    • In a small frying pan, add your olive oil, chopped zucchini and fry for a minute or 2 until slightly golden on both sides.
    • Add your chopped tomatoes in the pan and toss for just a second and then add your beaten egg. Season with Italian seasoning and salt and pepper to taste. Toss and cook until the egg comes together about 1 minute. Remember, your egg will continue to cook even after it is removed from the pan due to the residual heat.
    • Remove from pan and garnish with green onions if desired. Enjoy!

    Notes

    If you like to add a little milk or dairy alternative to your eggs, feel free to do so.  However, did you know that milk can make your eggs tough and bland?

    In addition, please add any other vegetables or mushrooms you desire. We used dried herbs as our little herb plants from seed are still germinating. However, feel free to add fresh basil and herbs as that would be extra delicious.

      Said hello to you on this page nearly a year ago 🙂 ! Oh, loving zucchini as much as I do have made this many a time for brunch/lunch . . . and if I don't feel like stirring the eggs a few minutes under the stove grill will turn this into a most moreish frittata . . . yum !! Hope the past few days have gone well . . .

      I hope you got what you wanted for mother's day! These would be perfect any day of the week! Manservant actually made me a pretty good omelette so I'm not complaining. But it sure isn't the same without the kids home!

      I always use water to thin my eggs....glad to know this is a good thing!!! I make cheese, spinach and mushroom omelets frequently, but am ready to shake things up a bit. Will be adding this to my rotation!! Happy Mother's Day, Bobbi!!!

      Well, i ear lunch as a king and dinner like a prince . . . Have always loved shakshuka so your delicious-looking dish is very attractive indeed ! Fot me this will entail an outside trip to the herb pots for really fresh flavour . . . Be careful ! Be well !

        Hi there Eha! Thanks so much. We cannot wait until our germinated herbs are strong enough to be repotted and be taken outside. Fresh herbs are the best. Did you hear we had snow yesterday?
