    Cozy Chicken Curry soup is like snuggling under the covers on a cold day  as it is filled with tender chicken, vegetables, ginger, garlic, turmeric and curry powder. Soup that warms you from the inside out in just 30 little minutes!

    Oh my goodness! In just one 24 hour period, Hong Kong went from I feel like I may melt whilst waiting for the bus (30 degrees Celsius) to cracking out the sweaters (18 degrees Celsius). I love fall! I love the crisp air! This is just the kind of weather that needs more than just a soup. You need a Cozy Chicken Curry Soup with a therapeutic kick of warming ginger, anti-inflammatory turmeric and spicy curry powder to keep the chill and colds at bay.

    You could make this soup in the slow cooker but I made this delicious soup in just about 30 minutes on the top of my stove. 10 minutes for chopping and 20 minutes to cook and you are in business. I did not even bother peeling my potatoes as this is a rustic and simple soup with no fussing required.     Don't you just love when you have been working or playing out side and your fingers are chilled and you pick up the warm soup bowl and you can feel the warm steam on your cheeks. This soup is hearty and filling.  I actually could feel the spices warm me from the inside out.

    You are just  going to love this Cozy Chicken Curry Soup as it is happily gluten-free, dairy free, low fat and warming. If you would like to make this meal paleo just swap out the regular potato for a sweet potato. You can make this vegan by using vegetable broth and exchange the chicken with more delicious vegetables like strong beans, cauliflower, root vegetables or whatever you like.

    This is also the cold and flu season and the weather is unstable up and down so this cozy chicken curry soup is perfect to bring balance back to your yin and yang.

    A huge cheat to this dish is just using  your LEFT OVER curry into this soup. If you do not have a gluten allergy, you can even add Japanese udon noodles to the broth. Seriously simple just put your leftover curry in a pan, add chicken broth and season with salt and pepper and adjust curry, turmeric, ginger and cumin to taste, heat  add cooked udon noodles and eat. The 10 minute little left over wonder. I promise I wont tell a soul, it will be our little secret.

    If you have not eaten curry then my make from scratch 30 minute little cozy chicken curry soup wonder is perfect fall and winter lunch or dinner idea. If you had a slow cooker you would just add all the ingredients into the pot and the spices and like magic, while you are work, dinner is cooked!

    Cozy Chicken Curry Soup

    Ingredients
      

    • 1 tablespoon olive oil
    • ½ cup onion
      chopped
    • 3 cloves garlic
      minced
    • 1 tablespoon ginger
      grated fresh
    • 1 carrots peeled and sliced
    • 2 stalks celery
      washed and sliced
    • 4 potato chopped (if paleo use sweet potato)
    • 4 chicken breasts boneless skinless chicken breast halves chopped into 1 inch cubes
    • 1.5 teaspoon turmeric
    • 1.5 teaspoon cumin
    • 1 teaspoon curry powder
      (or to taste)- spicy
    • salt and pepper
      to taste
    • 6.5 cups chicken broth gluten free

    Instructions
     

    • In a large soup pot, add olive oil and heat up pot to medium heat and add the chopped onions, garlic, ginger, carrots, celery and potato. Add the chopped chicken breasts. Stir in turmeric, cumin, curry powder and slat and pepper to taste. Just until the chicken starts to sear and then add the chicken broth.
    • Cook the cozy chicken and curry soup for about 20 minutes or until vegetables are fork tender and skimming off the scum that accumulates on top of the soup pot, so you have a clear broth.
    • Assess seasoning. If you want it spicier, add more curry powder. If you want it savorier add more salt and pepper to taste. If you want a more earthy taste add more cumin.
    • Enjoy a delicious bowl or two of cozy chicken curry soup.

    Can be stored in the refrigerator in a sealed container up to 3 days or frozen up to 2 months.

      So good and so easy! Made a batch of your cozy chicken curry soup this weekend and it’s was the perfect way to warm up after raking leaves all afternoon. Will make a big batch next time and save some for the freezer.

      Left over curry ? And, Bobbi, from where would one get that ? In this house the pot is empty before the appetite is satisfied 🙂 !! And why a, I getting a tad of a feeling you would so like to be in Hong Kong at the moment . . . clouds departing and comfortably cooling but not cold . . .Well, 'tis 28 C here today and tomorrow one degree less . . . don't know we are all that comfortable with the summer nods to us . . . not after last year . . . but we have had some rain and not too stormy weather and too many trees came to the end of their lives for there to be 100 km wide burns which made the glaciers in New Zealand 2000 km away melt and colour . . . we pray . . . we hope . . . we male lovely soup . . . your way !!!

        Crazy, right? Leftovers in our house? LOL ... You guessed that right. Missing HK very much and can't wait for things to get sorted so we can return. All of these forest fires have negatively impacted many parts of the world. Hoping the environment can do a little self healing along with prevention.

      This is very pretty. I love anything curried. I usually purée soups like this (obviously not with the chicken) but I love it all chunky and with the broth. Fabulous!

      We had the same kind of crazy temperature swing over here. A few days of the most incredible summer weather where we were wearing shorts followed by cranking the heat up in the morning. Last week we even had a snow flurry of you can believe that!

      I just love a nice chunky 'real' soup...hey, I was brought up on Campbell's and now when I'm desperate and open a can of it I wonder why I ever thought it was so good. Have to say I haven't done anything with curry so this is going to be a leap of faith for me - but I'm going to give curry a try. I was never exposed to it until we were renting an apartment while building our house. The woman down below us used to cook curry everything except she would also burn everything to a crisp then open her door to let the smoke and burnt curry fumes out. Sort of turned me off curry.

        These last couple of weeks we have had big swings in the temperature with increased humidity and this is just the kind of weather that is perfect for the cold and flu viruses so you need loads of help to stay healthy. Just a touch of turmeric, ginger, ginger and curry powder really helps build your immunity. I think the lady who used to make curry might not have been doing it just right. Normally, when using whole spices for a curry I toast them gently just until they start to pop in the pan, remove them straight away and then use a mortal and pestle to grind them up. It sounds like your neighbour was cooking the spices until they smoked or showed flames ... lol and that is not exactly the effect we are going for here... Wishing you a super week!

      I love curry soups and there is so much to love about this one. First of all that brown leaf plate that the bowl is sitting on. LOVE it. And every curry soup I've ever made has had coconut milk. Really like this brothy version. Pnned.

        It is not even really cold here in HK yet but I am craving soups. I think even more I have been just craving curry and something warming. I am so glad you like my pottery leaf plates... I actually made them while I lived in Japan. I used real leaves as a template for my dishes and each of my dishes are unique sizes... miss those days.

      This is such a simple and delicious soup! I also love the little bowls you serve them in. I'm still looking for adorable soup bowls like yours! And I can imagine adding just a tad of coconut milk to make a creamy version... yum!
