Breakfast Bap

A Breakfast Bap is a hearty breakfast sandwich made with eggs, cheese, UK bacon (rashers), drizzled with a little HP Sauce and grilled to perfection.

Ingredients

  • 8 slices bread
    hearty white or bap bread
  • cooking spray
  • 4 whole eggs
  • 4 slices rashers (UK bacon)
  • 1 tablespoon butter
  • 4 slices cheese
    Colby Jack or cheese of choice
  • 4 tablespoon HP Sauce

Instructions

  • Preheat pan and cook rashers over medium heat until crispy. You can substitute regular bacon or Canadian Bacon for the rashers
  • Place a small amount of cooking spray/oil to non-stick pan and on medium heat cook egg. Add whole egg directly on to pan and let set. If you like your eggs over easy with a soft center, then after 2 minutes turn over gently without breaking the yolk and then cook for 1 more minute. If you like your eggs cooked well done, like my teenagers, then break the yolk before flipping the egg and then cook another 1-2 minutes.
  • If wish to add cheese, then place a slice on the egg before removing from pan.
  • In the mean time while cooking your eggs, heat up a grill pan and add your "buttered" baps or thick crusty white bread until it has nice grill marks. (if you do not have a grill pan, you can use a toaster or even the oven to toast and warm the bread)
  • Assemble the breakfast bap. Place one piece of toast on a plate and top with the cooked egg (with or without cheese), 2 pieces of crispy rashers and a nice layer of HP sauce and top with one more piece of toasted bread.
  • Serve with a side of grilled tomatoes and baked beans.  As the cook, make sure to get your serving set aside in a safe place because these little Breakfast Baps wonders won't last long. This is what happened to my breakfast bap when it was left unattended. Enjoy!

Notes

You can substitute regular bacon or Canadian bacon for rashers.
