- 1 tablespoon Olive oil
- 1 Onion
small chopped - 4 cloves Garlic
peeled and chopped - 1 teaspoon ginger
fresh grated or ½ teaspoon dried ground - 2 teaspoon Garam masala
- 1.5 teaspoon Curry powder
- 1 teaspoon Coriander
- 1 teaspoon turmeric
- 1 pound Turkey ground
(minced) - 2 Sweet potatoes
large peeled and chopped into cubes - 15 oz Garbanzo beans
(chickpeas) - 14 oz tomatoes
canned chopped or pureed - 2 cups Chicken broth
- Salt and pepper
to taste - 1 cup peas we used frozen peas
In a large pan or wok add olive oil, onion, garlic, fresh ginger, garam masala, curry powder, coriander and turmeric and cook for about 1 minute or until aromatic. Add the fresh ground turkey and cook for 2 minutes or until about halfway browned.
Then add all at once, sweet potatoes, garbanzo beans (chickpeas), chopped or pureed canned tomatoes, chicken broth and salt and pepper to taste. Place a lid on your ground turkey sweet potato curry and cook over medium heat or medium simmer for about 15 minutes. The sauce in the pan should be reduced by half. Remove the lid and add the frozen peas and stir until peas are unthawed and bright green.
Serve Ground Turkey Sweet Potato Curry with rice or cauliflower rice and enjoy.
Our family is not big on tomato chunks. They prefer pureed tomatoes. You may also use chopped canned tomatoes or whole tomatoes and then break them up in your pan.
If your family does not like sweet potatoes you can exchange with regular potatoes, but you are going to love that naturally sweet and spicy flavor together.
If you need to make this recipe low carb, you can exchange the sweet potatoes and garbanzo beans (chickpeas) with more hearty lower carb vegetables like cauliflower, peppers, zucchini, eggplant, etc.
You can make this recipe vegan by holding the ground turkey and adding more of your favorite veggies or exchange with a meat alternative of choice. Also, you will need to exchange the chicken broth with a vegetable broth.
