Sticky Rice With Mango: Khao Niao Mamuang ( ข้าวเหนียวมะม่วง)

Sticky Rice With Mango also known as Khao Niao Mamuang ( ข้าวเหนียวมะม่วง) is a traditional dessert from Thailand with delicious sweetened coconut sticky rice with ripe mangoes.

Ingredients

  • 100 grams Glutinous Rice
    (sticky rice)
  • ½ cup coconut milk
  • 2 teaspoon coconut cream
  • 2 tablespoon sugar or sugar alternative
  • ¼ teaspoon salt
  • 50 grams mangoes
    sliced (Can substitute with Jack fruit or any fruit you like)
  • toasted mung beans
    optional

Instructions

  • Soak the sticky rice in water for 3-4 hours or better overnight.
  • Drain the rice grains and put in the sticky rice basket for cooking with boiling water.  (In Thailand, traditionally, sticky rice is steamed in these long funnel-like baskets. However, you can use whatever you have on hand such a standard steamer, Chinese bamboo steamer or maybe just use a big wok with a small cup and a plate on top with water on the bottom to achieve the concept of steaming.)
  • Steam for 30 minutes.
  • Heat coconut milk, sugar and salt and stir well.
  • Add the sticky rice, mix together and leave for 10 minutes.
  • Stir one more time and serve on a plate with sliced mangoes.
  • Pour the coconut cream over the sticky rice and top with toasted crunchy mung beans.

Notes

We also sometimes put in a 1 inch peeled knob of ginger when we steam the rice and it makes it really delicious.
