In reply to Eha. Hi there Eha. We think Steamed fish is fantastic too. Actually when you parcel the fish it is getting steamed in it's own cute little package. Makes for really easy cleanup and that is always a winner for us. Grapefruit is one of those very underutilized fruits. Because it is a little naturally sweet and a little sour, it is lovely in this spicy citrus baked salmon packet. Interesting ! Had somehow missed this last time you posted it and welcome the recipe to try as another way of preparing the salmon oft around or, I daresay, other fish as well using the same methodology. I normally tend to steam most fish, oft with some of your ingredients but find the 'parcel'-way of cooking a fun change especially when sharing the food with others. Have not used grapefruit much in cooking but would love to taste especially when combined with my beloved coriander ! Shall try . . . combine with whatever 'noble grain' first comes to hand . . . thanks !

My sister makes fish in packets on the grill -- I have to remember to try this in the summer time. I wonder if this can be done in the overn too>?
