Loved this! I only used one Tbsp of curry sauce, and honestly forgot the turmeric, but it was still delicious! I did not peel my squash, just cut off the gnarly ends. Will definitely make this again before the cool squash disappear. I don’t think my sauce “cracked” but it was pretty thick.

I love how colorful and healthy this recipe is and very timely for me. I had squash in thai curry sauce with lentils and sticky rice last weekend at Yosemite and immediately planned in my head to make it when I come back as it was so tasty. Now I'm looking at your recipe and can't wait to try.
