You are going to love this quinoa fruit salad as it is so refreshing and it takes under 30 minutes to make. This recipe is also happily gluten-free, egg-free, dairy-free and vegan.
I hosted an easy peasy gathering with some close friends and whipped up this Quinoa Fruit Salad together in the morning along with an asparagus and goat cheese frittata. It was a huge hit! I love this salad as you can made it a few hours in advance of your guests arrival so you have more time to entertain and spend less time in the kitchen. This gave me more time get baby cuddles with sweet newborn KT and catch up with my dear friends.
We have had the most beautiful weather in Hong Kong this week, sunny, cooler and breezy. I am not trying to rub it in, well maybe I am. After we had about 6 weeks of no sun and dampness, I am so ready for spring. I am enjoying every moment of being able to have our windows open before the heat wave arrives... this weather is just going to be perfect to celebrate the upcoming Mother's Day.
My mom lives over 6000 miles away and is 88 years young and is just gorgeous. I am blessed to be able to still hear her voice and tender guidance even though we live miles apart. I will always be thankful for my mom's way of pushing me to achieve my highest goals without even know that she was doing that. Moms are sneaky that way don't you think, well at least the good ones are, that is for sure. My mom was and still is my little cheerleader from 6000 miles away cheering her 3 girls on to do what they do best. I remember when I was a little girl she was the bravest women I knew and never gave up but instead was persistent to achieve whatever she wanted. I hope that I can give my boys that gentle push and cheer, without them knowing it, to help them be the best they can be.
Moms deserve a little something to let them know they are very special in our lives. Moms also want to stay healthy and eat what they preach. I made my quinoa according to the package directions the night before but you can also make it the day of and just put in the freezer to get it cooler, faster. Quinoa has been called the "mother of all grains" even though it is actually a seed instead of a grain. I think quinoa looks a little bit like couscous but maybe smaller. Quinoa is high in protein, fiber and vitamins and has also been called a superfood by scientists. However, I just like quinoa as I love its nutty flavor and fun little crunch when it is cooked. Quinoa needs to cook about 20 minutes. The ratio of quinoa to water is 2 parts water for every one part quinoa. You may also find quinoa in red or brown or white as I am using here today. You can use any 3 but I like the white quinoa in the fruit salad as it is a little milder.
You can use absolutely any fruit you wish and is in season or readily available in your area. Strawberries and mango are in season now and are plentiful in the markets along with grapes, blueberries and loads of kiwi, so that is what I put in my fruit salad. Mix it up and have fun.
The dressing could not be easier as it has only 3 little fresh ingredients; key limes, orange and a little honey. That's it! How simple is that?!! There is no oil or salt just, pure and fresh ingredients and fruits that are colorful like the rainbow. Quinoa Fruit Salad is healthy and delicious and breeze to put together.

Light and lovely seasonal fruit such as strawberries, mangos and grapes tossed with quinoa, mint and a refreshing citrus dressing.
1Cook 3/4 cup quinoa per directions. Yields approximately 1.5 cups cooked quinoa. cook the day before and store in refrigerator or make the day of and cool in the freezer to assist with cooling process.
2chop up your strawberry, grapes, kiwi, mangoes and add your washed blueberries to your cooked and cooled quinoa.
3In a small bowl mix together your lime juice, orange juice and honey until honey is incorporated.
4Add your citrus honey dressing to the quinoa and fresh fruit mixture, add you chopped mint and mix well. Serve and enjoy.
5You can make your Quinoa Fruit Salad 2 hours in advance. Alternately, make your quinoa, cut up fruit and make your dressing and store in separate containers the night before and then assemble on the day you will be serving.
