I absolutely loved your homemade citrus gremolata. Plus, using the Instant Pot makes preparing this flavor packed dinner so much easier on a busy weeknight. Although I prefer the rich flavors of the beef oxtail, I can't always find it at my local grocery store, so I really appreciated your tip for how to make this using a chuck roast.

Oh how lovely to have this come up again especially at this time of uncertainty when Down Under seems to have 'lost the plot' alongside the rest of the world . . . when will the clouds move away . . . Altho' my current world sans friends around the table asking for your recipes . . . . and hence a life basically on stirfries, frittatas and the most happy and colourful salads one can put together . . . this beautiful recipe does regularly appear on the table - oxtail I can always access, veal shanks bring a '?' into my butcher's face . . . love . . .

We were so inspired by this recipe. We made something very similar using your prep and method, but with a different meat. We couldn't find Ox tail - we would have had to order it. So we used a nice beef cut as a replacement. The flavor from that sauce is to die for. Thanks so much.

The rich sauce looks wonderful. I've seen Ox Tail in the grocery from time to time, and it seems a bit pricy for all the bone that's in the package. I guess the flavor is worth it.
