I really need to cook with millet more often! I forget how much I love it, it's healthy, quick cooking, and it's so darned cheap, too. It's going back on the grocery list right now.

This was very good, and easy to make: I prepped the garnishes and dressing while the millet was cooking. Next time, I'll add green onions or red onions quickly pickled in sherry vinegar. Maybe some chickpeas as well, and the zest from the lemon.. Thank you for the inspiration!

I've been looking for more ways to eat millet and this was perfect. I especially enjoyed the bright, lemony dressing!
