Thanks so much Eha! I love these baking dishes too. Purchased at Costcos, believe it or not. Butternut squash and other pumpkins are usually only available during the harvest season around us so we enjoy them whilst they are here. Even the boys, that are huge carnivores, love this lasagna. In regards to kitchen fresh herbs...I think I must over harvest them as some are just not doing as well as hoped. Might need to start another set of seedlings. (smiling)

Bobbi - you know I do not have to nor do I keep any diets whatsoever but I DO think this looks like an unctious dish I should take time to make soonest ! And I just envy you that beautiful baking dish you have used. We use a tremendous amount of butternut pumpkin here all year round really . . . but I do have to check our supermarket freezers as to the availability of it already pre-prepared in as many ways as you can buy it. We just take the knife and do some work usually 🙂 ! Especially like your onion and mushroom mixture . . . perhaps would somewhat cut down on the amount of the cheeses, moreish tho' they are . . . fair amount of herbs would come in from the kitchen garden . . . shall make soon . . .
